Carrot Cake Bites

1 cup Almonds

1 TBSP Chia Seeds

1 TBSP Hemp Seeds

1 tsp. ground Cinnamon

1 tsp. ground Nutmeg

1/2 tsp ground Cloves

1 tsp Celtic or Himalayan Sea Salt

16 pitted Medjool Dates

1 cup grated carrots

I cup unsweetened

shredded coconut (I left the coconut out of this batch)

I Added the almonds to a food processor and blended until fine. Then I added all of the pitted Medjool dates, chia, hemp, cinnamon, nutmeg, clove, salt and coconut, blended until mixed well.

Then added the grated carrots, blended enough to mix.

Shaped into balls and refrigerate.

You can also press into a glass container and refrigerate for a couple hours then slice into square shapes.
